1 package baby back or pork loin ribs
2 tablespoons cooking oil
1 large finely diced onion
1 head minced garlic
6 tablespoons flour
2 cups diced roasted green chilies
4 teaspoons diced jalapeņos
2 cups of water
3 cups chicken broth
1/2 tablespoon ground cumin
2 teaspoons salt

Open package of ribs and rinse under cold water. Cut the ribs individually.

In large wok place oil, onions, and garlic and brown on medium heat for 5 minutes. Add ribs, water and salt. Bring to boil and remove brown and white foam that develops with a spoon. Boil until ALL the water is gone (about 25-30 minutes) and the ribs get brown by getting seared on the wok. Set ribs aside.

In a large pot bring to boil the 3 cups of chicken broth. Use a blender to puree 1 cup of green chilies and all the jalapeņos. Add green chile and jalapeņos puree, the remaining cup of diced green chilies, flour and cumin to the boiling broth. Stir and let it all boil for 5 minutes. Reduce heat and add all of the ribs. Simmer for 45 minutes while stirring occasionally.

Turn off the heat and let it sit for 5 minutes. Sauce will thicken and coat the ribs beautifully. Serve!
