4 baking potatoes, about 1/12 lbs, peeled and cut into chunks
Salt
1/2 cup of milk
1/4 cup sour cream (optional)
2 tbsp. butter
Fresh ground pepper
6 tbsp. grated Parmesan
1 egg, beaten

Directions:
Directions:
1) Simmer potatoes in salted water until tender, about 15 minutes

2) Run the potatoes through a ricer or mash in a large bowl. Warm the milk and sour cream in the microwave and stir in. Now add pepper, 4 tbsp. of the cheese and the beaten egg. Mix well.

3) Spoon potatoes into a flat, buttered baking dish. Smooth over the surface and sprinkle on the last 2 tbsp. of Parmesan. Can store in the refrigerator overnight at this point.

4) Bake at 350º until thoroughly heated and the top is golden brown, 35-45 minutes (if from the frig). Serve hot

You can make this a day ahead, refrigerate before baking which makes it handy for holidays and potlucks. Not quite mashed potatoes, but not as time dependent either. As always with mashed potatoes, don't let your potatoes sit in the water too long, they will release their starch and get gummy, also always warm your dairy before you put it into the potatoes to mash.
