1 box vanilla wafers
2 8 oz. cream cheese
3/4 cup sugar
2 eggs
1 T. lemon juice
Directions:
Directions:
Mix all ingredients but wafers until fluffy. Line muffin tin with cupcake papers. Put 1 wafer in bottom of each paper. Fill 1/2 full of cheese mixture. Bake at 350º for 20 minutes. Remove cupcake papers from muffin tin and cool on news paper. When completely cooled remove paper from cheese cake. You can either freeze or refrigerate and use within 2 days. Top with favorite toppings.
