1 c. ice-cold heavy cream
1 tsp. vanilla
1/4 c. sugar (more or less)

When you're ready to make whipped cream, pour it into a small metal mixing bowl and add a splash of vanilla. One teaspoon or so should do it, but you don't need to be fussy. If you like sweeter whipped cream, add a few tablespoons of sugar-regular or powdered. Then just start whipping! When stiff peaks hold firm, you're done.
