2 cups cooked rice
1 cup canned black beans, drained and rinsed well
1 cup whole kernel corn
1 cup cherry tomatoes, halved
1/2 medium avocado, diced
1/4 cup chopped fresh cilantro
1/4 cup chopped green onions
1/4 cup lime juice (2 limes)
1 tbsp. olive oil
1/2 tsp cumin
1/2 tsp salt
1/4 tsp black pepper

Directions:

1. Combine first 7 ingredients in a bowl.

2. Whisk together the dressing ingredients - lime juice, olive oil, cumin, salt and pepper - in a second bowl.

3. Pour dressing over rice and vegetables, stir well. Let stand for at least 1 hour to combine flavors. Can make up to 1 day ahead.
