2 slabs ribs (remove membrane)
Good rib rub plus fresh ground coffee beans
1 lemon
Beer good dark to cover pan 1/2 inch
Balsamic vinegar
Good BBQ sauce and/or Sweet Chili sauce

Directions:
Rub lemon juice over ribs then rub. Sit overnight or at room temp 2 hours
Preheat oven 300º
Put ribs in rack (can cut in half)
Beer into bottom of pan 1/2 inch. Cover tightly with foil and cook about 3 hours.
Put ribs flat on foil lined pan and brush with balsamic and sauce.
400 degree oven or grill 25-35 minutes

Can rub ribs with lemon and add only salt and pepper and garlic powder. Sauce is sweet chili sauce with 4 T. butter, garlic, 1 T. chipotle powder, 1 c. Mae Ploy chile sauce, 2 T. brown sugar, 1/3 c. rice vinegar and 1 c. water. Bring to boil then simmer until reduced by half about 40 min. Brush on ribs generously but save some for ribs after finishing.
Tuscan style rub: 2 T. olive oil, 2 T. chopped rosemary, 1 1/2 T. salt, 1 1/2 T. fennel seeds, 2 t. pepper, 2 t. chopped sage, 2 t. chopped thyme, 2 t. sweet paprika, 1 t. crushed red pepper, 1 t. ground coriander, 1/2 t. ground allspice
Good with lager beer or malbec
