2 bunches asparagus, ends trimmed away and cut into 1” sections
1 T. olive oil
1 t. red wine vinegar
2 hard-boiled eggs
Roasted red peppers
Crumbled Feta cheese
Sliced black olives

Directions:
Directions:
Steam asparagus for 5-7 min until tender but still green. Plunge into cold water to stop cooking. Drain and pile on plates. Drizzle with the oil and vinegar. Layer the other ingredients on top.
