Ingredients: 3 tbsp. butter 3 tbsp. flour 1 1/2 c. milk 1 dash Tabasco 1 tsp. salt 1/2 tsp. dry mustard 2 c. shredded extra sharp cheddar (Cabot if you can find it) 8 oz. elbow pasta 1 c. sour cream 2 tbsp. melted butter 20 crumbled Townhouse crackers

Directions:Preheat the oven to 350º. Cook the macaroni in boiling water.
Melt 3 tablespoons of butter in a saucepan. When the butter is bubbling, sprinkle on 3 tablespoons of flour. Whisk and cook until the roux reaches a blonde color.
Add the milk, Tabasco, salt, and dry mustard. Whisk to combine and cook until thickened. Stir in the shredded cheddar a few handfuls at a time until melted.
Put the cooked macaroni in a 2 quart casserole. Pour the cheese sauce over the pasta. Add sour cream. Mix melted butter and cracker crumbs and sprinkle over top. Bake for 25 minutes. |
