4 small Idaho or russet potatoes
4 tbsp. bacon fat or oil

Scrub & rinse potatoes, don’t peel
Place a cast iron skillet on med low heat, preheat 5 mins
Grate potatoes using largest holes of a box grater; remove moisture by putting them into a clean tea towel & squeezing
Add fat to skillet ,scatter potatoes evenly in pan, sprinkle salt ,cook for 4 mins without disturbing; then lower heat & cook other side.
Serve immediately.
