1/2 cup crushed saltines
1/2 grated Parmesan cheese
2 boneless, skinless chicken breast halves

Directions:

Preheat oven to 350º

Separate the white of the egg into a small bowl or dish and beat well. Discard the yolk. In a separate dish, mix the crushed crackers and Parmesan.

Rinse and pat dry the chicken breasts. Coat with first the egg white and then the cracker mixture.

Place the chicken in a pan and bake for about 35 minutes, until chicken is cooked through (no pink shows in the middle) and the cracker coating is crispy.

Also works well with bone-in chicken thighs, though use a thermometer to check for 170 degrees doneness when you go this route.
