1/2 c. plain bread crumbs
3 tbsp. grated Parmesan cheese
2 tsp. dry basil
1/2 tsp. garlic powder
1/2 tsp. salt
1 med. eggplant (1 - 1 1/4 lbs.)
Reg. or light mayonnaise

Directions:
Directions:
Preheat oven to 425º. Mix bread crumbs, Parmesan cheese, basil, garlic powder and salt in a shallow dish. Slice unpeeled eggplant into 1/2-inch thick rounds. Spread both sides of eggplant with mayonnaise. Dip each side into crumbs, pressing lightly. Place on greased baking sheet. Bake for 10 to 12 minutes or until undersides are golden. turn over and bake for 4 - 5 minutes or crisp and golden on both sides.
