4 slices bacon
1 c. ham, diced (opt.)
1 lg. onion, finely chopped
1/2 bell pepper, finely chopped
3 cloves garlic, finely chopped
3 tbsp. flour
1 (16 oz.) can stewed tomatoes, chopped (can be omitted from recipe)
3 lg. cans white whole kernel corn, drained OR 10 ears fresh corn
1 1/4 c. hot water
1 tsp. thyme
1/4. c. parsley
Salt to taste (about 1 tsp.)
1/2 tsp. pepper

In a large frying pan on medium heat, fry bacon. Do not crisp. When enough fat from bacon forms in pan, add onions, bell pepper and garlic. If using ham, add now. Fry all until limp. Stir in flour; simmer 15 minutes. Stir in tomatoes; let simmer 15 minutes. Add water, thyme and parsley; mix well. Cover and let simmer for 20-30 minutes. Stir in corn; taste for salt. Cook on low fire, uncovered, for about 20 minutes. If using fresh corn, increase cooking time. Serve with rice or creamed potatoes.
