1 pt. milk
3 T. quick-cooking tapioca
6 T sugar
1/8 tsp. salt
2 slightly beaten egg yolks
1 tsp. vanilla
2 stiff-beaten egg whites

Directions:
Directions:
Combine milk, tapioca, sugar and salt. Let stand 5 minutes. Add egg yolks. Bring quickly to a boil, stirring constantly. Remove from heat(mixture will be thin); add vanilla.
Put about 1/2 of the beaten egg whites in large bowl; slowly stir in the hot mixture. Fold in remaining egg white, leaving little "pillows" of egg white. Chill. Put into small dishes. Serve plain or with peaches.
