Ingredients: 12 Asparagus spears (13 shalt thou not count, neither count thou 11, excepting that thou then proceed to 12. 14 is right out) 4 slices prosciutto 3 tbsp. butter, cubed freshly ground pepper 1/2 c. Parmesan cheese, freshly grated 1/2 tsp. paprika 1 lemon, quartered

Directions:1. Preheat oven to 375ºF. Grease a baking dish with some butter. 2. Pare the ends asparagus to within about 6-7 inches of the tips. 3. Into a sauté pan add enough water to cover the asparagus once it is added. Bring to a boil. 4.Add the asparagus and cook uncovered over high heat until tender but firm. 5. Put ice and water into a bowl and transfer the asparagus when done into the ice water bath for a minute to stop the cooking process. 6. Divide the asparagus into 4 bundles of 3 stalks each. Wrap 1 piece of prosciutto around the center of each bundle. 7. Place the 4 bundles into the greased dish. Dot with butter. 8. Season to taste with pepper. Sprinkle evenly with cheese. 9. Place into oven until the cheese browns, about 5 minutes. 10. Remove from the oven, dust with paprika and serve hot with lemon quarter. |

Notes: Asparagus that tastes good. Editor's Note: don't listen to him for a second, it is better with 20 asparagus spears, especially if they are very young and thin, 5 per bundle. The bundles do best with an odd number of spears, easier to get them to hold together.
