8 oz. cream cheese
1/2 c. sugar
1 egg
1/8 tsp. salt
1 c. mini semisweet chocolate chips
1 1/2 c. flour
1/4 c. baking cocoa
1/2 tsp. salt
1 c. sugar
1 tsp. baking soda
1 egg, beaten
1 c. water
1 T. white vinegar
1/3 c. vegetable oil
1 tsp. vanilla extract

Directions:

Oven: 350º ~ Yield: 20 cupcakes
Combine the first 4 ingredients in a bowl and beat until smooth and creamy. Stir in the chocolate chips and set aside. Sift the flour, cocoa, salt, sugar and baking soda into a medium bowl. Add the egg, water, vinegar, oil and vanilla and mix smooth. Fill paper-lined muffin cups half full with the chocolate batter. Add a heaping tsp. of the cream cheese mixture in the center of each. Bake for 25 minutes. Let stand until cool. Store in the refrigerator. (May sprinkle the tops with a small amount of sugar and chopped almonds before baking, if desired.)
