"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste

Ingredients:
Ingredients:
2 cups of sifted Self Rising Flour
1/4 teaspoon of baking soda
1 tablespoon of baking powder
6 tablespoons of lard
3/4 cup of buttermilk

Directions:
Directions:
Mix the dry stuff together, add the shortening and mix with a pastry cutter. Add the buttermilk and knead thoroughly though not excessively. Cover with plastic wrap and place the dough in the refrigerator for about 30 minutes. The recipe makes about 6 good sized biscuits.

Preheat the oven to 450* then roll out the dough to about 3/4 inches thick. Use a drinking glass with about 3" opening as a biscuit cutter, cut and place the biscuits on a nonstick pan to bake for about 10-13 minutes. Bake until golden brown on top.

Personal Notes:
Personal Notes:
There are three must do items to insure success. First, be sure to use Self Rising Flour, it gives the biscuits a big jump up in fluffiness. Secondly, don't over work the dough, mix and knead only enough to get it blended. Overdoing it will take away the flakiness of the biscuit. Also the time in the refrigerator will keep the shortening cold and also supplement the flakiness. Last, be sure to use buttermilk, the creaminess it adds is unbelievable. I use an electric oven and felt 10 minutes too long I thought 8 minutes better
