4 chicken breasts, cooked and cubed
6 oz. (at least) of crumbled feta cheese
1/4 cup of chopped fresh parsley
1/4 cup of kalamata olives, pitted and sliced (any black olives will work)
1 cucumber, peeled, seeded and chopped
1/2 cup plain yogurt
1/2 cup mayonnaise
2 tbsp. lemon juice
2 tsp. minced garlic (2 cloves)
Greek seasoning to taste (I use Cavender's)

1. In a large salad bowl combine first five ingredients (through the cucumber).

2. In a separate bowl, mix together the yogurt, mayonnaise, lemon juice, garlic and Greek seasoning.

3. Pour dressing over the chicken mixture and stir. Refrigerate for at least 30 minutes to allow flavors to combine.

Recipe is easily doubled. A great, but slightly different chicken salad. Can serve on lettuce or in pitas.
