6 eggs, separated
3 c. sugar
1 c. cream
2 tsp. vanilla
milk
dash of salt

Directions:
Beat egg whites until stiff. Add 1 1/2 c. sugar. Beat until whites stand in peaks. Whip cream. Beat egg yolks with vanilla. Add remaining sugar, a small amount at a time, beating until thick and lemon colored. Add 1 qt. of milk, a small amount at a time, until blended. Place in freezer container. Fold in meringue and whip cream gently with dasher. Add additional milk to fill container. Freeze according to manufacturer's directions.

To ripen homemade ice cream, remove the dasher and cover the freezer can with wax paper or foil. Put the lid back on the can and plug the hole in the lid. Pack the outer freezer bucket with enough ice and rock salt to cover the top of the freezer can. (Use 4 cups ice per 1 cup rock salt.) Cover freezer with towels or blankets. Let set 4 hours.
