Select the deep ruby colored yams (they are orange inside). If large, 1 potato will provide 2 servings. Peel the potatoes and cut into chunks. Drizzle with olive oil or canola oil or whatever you prefer. Add chunked onions and red pepper for color and flavor. Toss together to coat all with oil. Place in baking dish and sprinkle with your favorite seasoning. Bake uncovered 375º for 45 – 50 minutes. Test with fork for doneness. (Adjust baking time depending on the size of the chunks of potatoes – over-baked they get mushy, but taste fine anyway).
