4 T unsalted butter
12 carrots
1 c diced celery
1 onion
4 cans beef bouillon
3 tsp flour (don't use)
pinch nutmeg
1/2 tsp pepper
2 T parsley

Directions:
Directions:
Melt butter in saucepan and brown thinly sliced carrots, celery and onions. Stir frequently. Takes about 15 minutes. Medium heat to avoid butter burning. Add a bit of oil if needed. Blend into pot with bouillon. Cook x 45 minutes uncovered under low heat until tender.
Puree soup.
Put into serving bowls. Add nutmeg and pepper. Served with a dollop of unsweetened whipping cream on top with some chopped parsley
