28 oz./796 mL canned tomatoes, chopped or 2 1/3 lbs(1kg) fresh tomatoes peeled with stem ends and cores removed
7 1/2 oz./213mL canned tomato sauce
1 garlic clove, minced
1 small green pepper, seeded and chopped
1 small red pepper, seeded and chopped
1/2 teaspoon dried oregano
1/2 teaspoon coarse (pickling) salt
1/2 teaspoon dried crushed red chili peppers

Directions:
Combine all ingredients in large saucepan. Bring to a boil over medium heat. Continue to boil gently for about 20 minutes, stirring occasionally until thickened. Cool. Pour into freezer containers to within 1 inch (2.5 cm) of top. Cover with a tight fitting lid. Freeze.

Yields: 3 half pints.

This recipe comes from Company's Coming Preserves cookbook. I leave out the crushed red chilies because I am a bit of a wimp & like my salsa mild. For a hot salsa add more. Recipe can easily be doubled. I put the salsa in Mason jars in the freezer into small servings, so I just have a small amount to thaw & serve.
