2 slices bacon
1 onion, chopped
1 15oz. can black eyed peas, drained
1 14oz. can stewed tomatoes, undrained
1 c. rice, cooked
¼ tsp. salt
¼ tsp. pepper

Directions:
Directions:
Cook bacon in a large skillet until crisp; remove bacon, reserving 2 tablespoons drippings in skillet. Crumble bacon, set aside. Sauté onion in drippings until tender. Add remaining ingredients, stirring well. Spoon mixture into a 1½ quart casserole. Bake at 350° for 30 minutes. Garnish with reserved bacon. Serves 6.
