5 slices bacon
1 medium onion, chopped
2 c. chopped, peeled tomato
1 c. long grain rice, uncooked
1 c. finely chopped cooked ham
½ tsp. salt
¼ tsp. pepper
⅛ tsp. hot sauce

Directions:
Directions:
Cook bacon in a large skillet until crisp; remove bacon, reserving 2 tbsp. drippings in skillet. Crumble bacon, and set aside. Cook onion in drippings over medium-high heat, stirring constantly, until tender. Add crumbled bacon, tomato, and remaining ingredients to skillet; cover and cook over low heat 10 minutes. Spoon mixture into a lightly greased 1-quart baking dish. Cover and bake at 350° for 1 hour, stirring every 15 minutes. Serve 6 to 8.
