6 potatoes
3 medium onions
Salt and pepper to taste
1 c. sharp cheese, grated

White Sauce:
4 tbsp. margarine
4 tbsp. flour
Cajun seasoned salt to taste (Tony Chachere’s or Zatarain’s)
2 c. milk

Directions:
Directions:
Peel and cut potatoes into ¼ inch slices. Par-boil potatoes until slightly soft. Drain. Slice onions into ¼ inch slices. Alternate layers of potatoes and onions in a 2 qt casserole dish. Pour white sauce over potatoes and onions (recipe below). Top with cheese. Bake at 350° for one hour.

White Sauce:

Melt margarine in saucepan over low heat. Blend in flour and seasoned salt. Cook over low heat, stirring until mixture is smooth and bubbly. Remove from heat and stir in milk. Heat to boiling, stirring constantly; boil and stir one minute. Serves 8.
