4 lb beef brisket, fresh, not corned
2 large onions cut in slices or diced.
salt and pepper
ketchup or chile sauce
3/4 c water

Directions:
Directions:
In roasting pan put layer of onions. Add water and brisket which has been rubbed with salt and pepper, and garlic powder, if desired. Cover top of brisket with layer of onions, and spread ketchup or chili sauce over all. Cover tightly with foil, and bake at 350 for 2-3 hours. Test for doneness with fork; meat should feel soft but still firm.

Brisket will be better if made a day ahead. After cooling, cover and put in refrigerator overnight. Next day skim fat from cold brisket and slice and reheat in oven.
