2 pints cherry or grape tomatoes, halved
10 scallions, thinly sliced
1/4 c. fresh mint, minced
1/4 c. fresh basil, minced
1/4 c. fresh flat-leaf parsley, minced
1/2 c. rice or white wine vinegar
1/4 c. sunflower (or your favorite) oil
2 T. fresh orange juice
pinch of sugar
freshly ground pepper
12 large bibb lettuce leaves

Directions:
Directions:
In a large bowl, toss tomatoes, scallions, mint, basil and parsley. In a small bowl, whisk together vinegar, oil, orange juice, sugar. Add freshly ground black pepper to taste. Pour dressing over tomato mixture and toss to coat. Set aside for 20-30 minutes. Place 2 lettuce leaves on each plate and top with tomatoes.
