Fresh broccoli
Fresh green beans
Red, yellow, orange bell peppers
New potatoes
Red onion
Baby carrots
Yellow squash
Zucchini
Mushrooms
Olive oil
Fajita seasoning

Directions:
Directions:
Use as much of each fresh vegetable as you like and the crowd needs. Clean veggies and cut up. In a large roasting pan, coat veggies with olive oil and fajita seasoning and roast, uncovered, at 400º for 30 to 45 minutes.

Can be wrapped in foil and roasted on the grill.
