1/2 cup plus 3 tbl. unsalted butter
1/2 cup unsweetened cocoa powder
1/2 cup whole milk, room temp.
1/2 tsp. kosher salt
1 tsp. vanilla
5 cups powdered sugar, sifted
1 1/3 cups finely chopped toasted pecans

Directions:

Melt butter in a large saucepan over low heat. Whisk in cocoa powder (mixture will be stiff). Slowly whisk in milk and salt, then sift in the powdered sugar and mix until smooth. Stir in the vanilla and pecans. If using to frost a cake or brownies, chill in fridge or over a bowl of ice until spreadable (about 30 minutes).

This icing works well on Colleen's Black Magic cake as an alternative to the cream cheese frosting we normally use. I've also discovered that it makes a fantastic fondue for strawberries, apple or banana slices, marshmallows, etc.; just spoon some in a small bowl and heat briefly in the microwave, then place it on a platter filled with bite-size dippers! And discover for yourself how great it tastes with a scoop of vanilla ice cream or as filling for a dessert crepe.
