2 eggs, beaten
1/4 cup melted butter
3 tbl. cocoa
1 tsp. vanilla
1 5-oz. can evaporated milk
1 1/2 cup sugar
Unbaked pie shell

Directions:

Mix all ingredients together and pour into pie shell. Bake in a preheated 350º oven for approx. 40 - 45 minutes.

A friend of ours, Dawn Dietrich, did the cutest thing at a dinner party we attended. She made a recipe of Chess Pie and one of Chocolate Chess Pie and poured each filling into the mini pie shells you find in the freezer section at the grocery (If you try that, reduce the cooking time by about 10 minutes). Then she piled the little pies on a serving platter and loaded a separate large bowl with individual containers of Blue Bell ice cream. It made for a fun dessert presentation, plus it was yummy. When I tried it, I got about 8 - 10 mini pies out of each recipe, the Chess Pie and the Chocolate Chess Pie, so count on 16 - 20 total pies.
