4 large boneless, skinless chicken breasts
salt and pepper
1/2 - 1 C. chopped onion
6 T. margarine
Fresh broccoli, chopped or 2 - 10oz. packages frozen broccoli, thawed.
2 tsp. lemon juice
1 tsp. salt
1/4 tsp. pepper
1/2 tsp. thyme, crushed
4-6 medium tomatoes, chopped

Directions:
Directions:
Cut chicken breasts into 1/2-inch strips; sprinkle lightly with salt and pepper. In a large skillet, cook chicken and onion in margarine until chicken is no longer pink.
Stir in broccoli, lemon juice, salt, pepper and thyme.
Cover, simmer for 6 minutes and then add tomatoes.
Simmer, covered, for 3-4 more minutes.
Approx. 200 calories per serving (4 servings).

Heart-healthy and low calorie, but lots of flavor, originally from "Dieting To Stay Fit," a cookbook by Home Economics teachers. Easy to modify with extra/different vegetables, and their complementary spices (rosemary, curry, etc.).
