1 lb. Owens country sausage
1 1/2 lb. lean ground beef
1 eggplant
2 - 2 1/2 c. cooked rice
seasoning to taste
Directions:
Directions:
Brown sausage and ground beef - add some grease if necessary. Peel and dice eggplant; add to meat mixture. Turn down heat to keep from sticking. Let eggplant cook and soften. Add cooked rice, let sit to absorb flavors. Season to taste (salt, pepper, garlic salt or any preferred seasoning).
