1-2 bananas as desired, sliced 1/8 - 1/4" thick
2 large eggs
1 c. sugar
2 c. milk (all kinds except 1%)
1/3 c. self rising flour
1 bag of vanilla wafers
1 tsp. vanilla

Heat 2 cups of milk on medium heat in a 1 or 2 quart saucepan. Be sure not to scald the milk. If you are unsure of your prep time, turn your heat down just a tad. Meanwhile, mix the eggs, sugar and flour in a small bowl. Put your hand just above the milk (not touching), to feel for warmth coming from the milk. Should be ready, but if not, wait till milk is warm to add mixture. Whisk as you pour entire egg mixture into milk. Whisk often while pudding is cooking but begin preparing the dish. Use any 8-9" rounded casserole dish. Line the bottom and sides of the dish with vanilla wafers. Cut a banana into slices. Don't cut up a second one until you realize you need one. Top each vanilla wafer with a slice of banana. Remembering to whisk the pudding mixture on occasion. Don't panic if you have your pudding looks lumpy. Just whisk vigorously and it will smooth out nicely. Cook pudding until thickened. Remove pot from heat and add 1 tsp. of vanilla, whisking until it is thoroughly blended. Pour 1/2 of pudding mixture over vanilla wafers and bananas. Place a second layer of wafers and bananas on top of the poured mixture. Pour remaining pudding on top of second layer. Top with vanilla wafers for decoration.
Hint #1: I use real vanilla for incredible flavor.
Hint #2: This pudding can be multiplied as needed.

If you have completely forgotten to stir and burned the bottom of your pudding, don't panic. Pour pudding into another pot, being careful not to scrape the burned pudding into the mixture and continue with your recipe.
