Ingredients: 1 c whipping cream 1 c, plus 2 T sugar 12 squares (1-0z each) unsweetened chocolate, coarsely chopped 4 squares (1-oz each) semi-sweet chocolate, coarsely chopped 6 eggs, room temperature ½ c strong coffee ¼ tsp. salt ½ c chopped walnuts or mini chocolate chips

Directions:Beat cream with 2 T sugar in large bowl with electric mixer at high speed until soft peaks form – set aside Place chocolate squares in double boiler until melted Beat eggs and remaining 1 c sugar in large bowl with electric mixer at high speed about 7 minutes or until pale and thick Add melted chocolate, coffee and salt to egg mixture; beat until well blended Fold whipped cream and ¼ c nuts or mini chocolate chips into egg mixture. Spread in 8” round cake pan lined with parchment rounds, and sprinkle top with remaining nuts or chocolate chips Place pan in large roasting pan, add enough hot water to roaster to reach halfway up side of cake pan Bake at 350 degrees with oven rack in middle position for 30-35 minutes or until set, but soft in center |
