1 fat hen or cut up chicken
1 small onion cut in half
Handful of washed celery tops
3 chicken bouillon cubes
Black pepper and salt to taste
1 stick butter
1 medium onion, diced
1 cup chopped celery
1 tsp. minced garlic
1 jar sliced mushrooms, drained
1 small can evaporated milk
2 cups reserved chicken broth
1 can Cream of Chicken Soup
1 medium jar Cheese Whiz
1 small package spaghetti
1/2 cup grated mild cheddar cheese
1 tsp. salt
1/2 tsp. ground black pepper
1/2 cup crushed Ritz Cracker crumbs

Directions:

Cook chicken with small onion, celery tops, bouillon, salt & pepper until tender; drain. Remove vegetables and discard. Reserve 2 cups of broth for recipe and remaining broth for cooking spaghetti. Cook spaghetti for no more than six minutes; drain and set aside.

Chop chicken and set aside. Melt butter and sauté remaining onion, celery, garlic and mushrooms for two to three minutes. Add Cream of Chicken Soup, evaporated milk, Cheese Whiz, 2 cups chicken broth, salt and pepper. Stir until cheese is melted. Add spaghetti and chopped chicken. Pour into a greased 9x13" casserole dish. Top with grated cheddar and crushed Ritz Crackers. Bake in a preheated 350 degree oven for 25 to 30 minutes or until bubbly hot in the middle.
