2 large eggs
1 cup light sour cream
6 tablespoons butter, melted
¼ cup half and half milk
Jiffy cornbread mix
1 to 2 tablespoons sugar, optional
1 cup red, yellow, green and orange peppers finely chopped.
½ cup of jalapeno peppers finely chopped
1 cup of shredded mozzarella cheese
½ cup real bacon finely chopped

Directions:

1. Grease pan or spray with a baking spray. Heat oven to 400°.

2. Whisk eggs with sour cream, milk, and melted butter.

3. In a mixing bowl, combine all ingredients well.

4. Pour the batter into prepared pan. Bake for 20 to 25 minutes, or until tops are lightly browned.

5. Great by itself or serve with your favorite chili! Also tastes good with fried fish.
