GRAHAM CRUST
- 1/2 cup margarine
- 2 1/4 cup graham cracker crumbs
- 1/4 cup sugar, OPTIONAL

FILLING
- 2 cups milk
- 1/2 cup sugar
- 1/4 cup cornstarch
- 1/8 tsp salt
- 3 egg yolks
- 1/4 cup milk
- 1 tsp vanilla

MERINGUE
- 3 egg white, room temperature
- 1/4 tsp cream of tartar
- 6 tablespoons sugar

GRAHAM WAFER CRUST; Melt butter in saucepan. Stir in crumbs. (Sugar optional) Reserve 3 tablespoons. Press remaining crumbs int 9 inch pie plate covering sides and bottom. Bake in 350 F OVEN for 10 min. Cool.
FILLING; Heat first amount of milk in microwave until it boils. Meanwhile mix sugar and cornstarch in bowl . Mix in salt, egg yolks, second am't milk and vanilla. Add some of boiling milk to egg yolk mixture then add the egg mixture to the boiling milk. The reason for this way is so the egg yolk doesn't curdle. Boil until thickened. Pour into pie shell.
MERINGUE; Beat egg whites and cream of tartar in mixing bowl until stiff and frothy. Add sugar gradually, beating until stiff and sugar is dissolved. Spread over pie and sealing well to crust all the way around. Sprinkle reserved crumbs. Bake in 350 F oven about 10 min. until golden. Cool at least 2-3 hours before serving.
