- 3 lb. lean beef ribs, 4-5 inchesl long
- 1/4 cup onion, finely chopped
- 1/4 cup lemon juice
- 1/4 cup vegetable oil
- 3 tablespoons prepared mustard
- 1-3 garlic, finely chopped
- 2 tsp. salt
- pepper ground, to taste

Directions:

Combine the onion, lemon juice, oil, mustard, garlic, salt and pepper. Mix well. Place ribs in large plastic bag or shallow dish pour mixture over ribs and coat completely.

Marinate ribs in fridge for 12-24 hours. Stirring and turning occasionally.

Preheat oven to 400 F. Arrange the ribs fat side up in a single layer on a rack set in a shallow roasting pan.(discard the remaining marinade)

Roast the ribs uncovered in the middle of the oven for 20 minutes. Then reduce the heat to 350 F. Continue to roast for 1 hour and15 minutes longer, or until the meat is tender and shows no resistance when pierced with the point of a sharp knife.

Serve at once.

(Marinating them longer intensifies the flavour.)
