25-30 medium cucumbers, thinly sliced
8 large onions, chopped
2 large sweet bell peppers, chopped
1/2 c. salt

5 c. vinegar
5 c. sugar
2 T. mustard seed
1 tsp. turmeric
1/2 tsp. cloves

Directions:
Directions:
Wash and slice the cucumbers as thin as possible. Add the onions and peppers to the cucumbers. Add the salt and mix thoroughly. Let stand 3 hours or overnight. Drain off the liquid.

In a pot, combine the vinegar, sugar, and spices and bring to a boil. Add the cucumbers. Heat through but do not boil.

Pack into canning jars leaving 3/4 inch head space. Wipe the rims and cover with hot lids and rings. Process in a hot water bath 30 minutes.
