3/4 c. powdered sugar
1/2 c. Creamy peanut butter
1 baked 9" pastry shell
1/2 c. sugar
1/4 c. cornstarch
1/2 tsp. salt
3 eggs, separated
2 1/2 c. milk
1 tsp. vanilla
6 T sugar

Directions:

Mix together powdered sugar and peanut butter till crumbs form. (save 3 T to sprinkle on top). Cover bottom of pastry shell with remaining peanut butter crumbs. Mix together 1/2 c sugar, cornstarch, and salt in medium saucepan. Beat egg yolks slightly; add milk, stir in until well blended. Cook over medium heat, stirring constantly, until mixture comes to a boil and boil one minute. Remove from heat. Stir in vanilla, cool to room temp. Spoon into prepared pastry shell. Beat egg whites until foamy. Add sugar, one T at time, beating well after each addition. Continue beating until stiff peaks form. Spread meringue over filling, touching pastry on all sides. Top with remaining peanut butter crumb mixture. Bake at 425º about 5 minutes or until lightly browned. Cool at room temperature away from drafts.
