25 lbs. tomatoes, strained
1/3 c. salt
1 1/2 tsp. black pepper
3/4 tsp. cayenne pepper
1 1/2 T. allspice
1 1/2 T. cinnamon
3 3/4 c. vinegar
5 1/4 c. sugar
1 large onion left whole
3/4 c. cornstarch dissolved in a small amount of water

Cut, cook and strain the tomatoes to remove all the seeds and peels. Place in a very large pot.

Add all the ingredients except the cornstarch to the tomato and float the peeled whole onion on top. Bring to a boil and then turn down the heat. Simmer 4-6 hours until the catsup is reduced to 1/2 the volume stirring occasionally.

Remove the onion and discard. Dissolve the cornstarch in a small amount of water and slowly whisk it into the catsup making sure to avoid lumps.

Pour the hot catsup into clean hot pint sized canning jars leaving 1/2 inch of head space. Wipe the rims and cover with lids and rings.

Process in a hot water bath for 30 minutes.
