25 lbs. tomatoes, strained
1 c. olive oil
8 c. onions, chopped
8 T. basil
2 c. parsley
2 tsp. oregano
4 tsp. salt
4 T. black pepper
20 cloves of garlic, minced
2 large cans of tomato paste

Directions:
Directions:
Cut, cook, and strain the tomatoes to remove all the seeds and peels. Place in a very large pot.

Add all the remaining ingredients except the tomato paste and bring to a boil stirring occasionally. Turn the heat down and simmer until the volume is reduced to 3/4.

Add the tomato paste and mix thoroughly. Simmer until dissolved about 15 minutes.

Put sauce in clean hot quart sized canning jars leaving 1/2 inch head space. Wipe the jar rims and cover with hot lids and rings. Process in a hot water bath for 30 minutes.
