2 c cooked rice
1 1/3 c milk
1/8 tsp salt
4 to 6 Tbsp sugar or 1/2 c brown sugar
1 Tbsp soft butter
1 tsp vanilla
2 to 4 eggs
1/2 tsp grated lemon rind
1 tsp lemon juice
1/3 cup raisins or dates: optional
cake or cookie crumbs: optional

Directions:
Directions:
Preheat oven to 325º. Combine and beat well milk, salt, sugar, butter, vanilla and eggs. Mix with rice. Add lemon rind, lemon juice and raisins or dates if using. Combine lightly with a fork. Grease a baking dish. Cover the bottom and sides with cake or cookie crumbs. Put rice mixture in dish and cover with more crumbs. Bake the pudding until set about 50 minutes. Serve hot or cold.
