25 lbs. tomatoes, strained (50 cups)
2/3 c. dried onion or 10 medium onions, chopped
1/3 c. garlic, minced
3 T. + 1 tsp. salt
3 T. + 1 tsp. cumin
1/2 c. olive oil
8 tsp. cilantro
1/2 c. red wine
5 T. cayenne
2 1/2 tsp. black pepper
5 tsp. chili powder
5 jalapeņos, chopped

Directions:

Mix all ingredients together in a very large pot. Bring to a boil stirring occasionally. Simmer uncovered until the sauce reduces to 3/4 it's volume.

Fill clean hot pint sized canning jar leaving 1/2 inch head space. Process in a hot water bath for 30 minutes.
