12 oz. shredded cheddar cheese
8 oz. cubed Velveeta cheese
8 oz. pkg. cream cheese with chives and onions
several drops of Tabasco
1/2 c. chopped fresh parsley
1/2 c. finely chopped pecans

Directions:
Directions:
In food processor, combine cheeses and hot pepper sauce until smooth. Using rubber scraper, form cheese mixture into mound. Cover and refrigerate for 15 minutes or until easy to handle. Form mixture into two 7-inch logs.

In shallow bowl, combine parsley and pecans. Roll each log in parsley mixture. Wrap each in plastic wrap and refrigerate until firm. Serve with crackers. Store leftovers in refrigerator or freeze extra log.
