3 lbs. wild game (elk, deer, antelope)
2 lbs. pork trimmings
1 1/2 T. salt
1 T. sage leaf
1 1/2 tsp. nutmeg
1 1/2 tsp. ground thyme
1 1/2 tsp. white pepper
1 c. cold water

Directions:
Directions:
Cut all the meat into cubes and toss together. After mixing, add all the spices to the meat. Add the cold water and mix thoroughly.

Using a 3/16 plate, grind the meat and spices. Wrap and allow to sit overnight in a cold place before freezing.
