Crust

1½ cups graham cracker crumbs (vanilla or chocolate wafers, or ginger snaps work too)
¼ cup powdered sugar
6 Tbl melted butter
1 tsp cinnamon

Mix the following ingredients well and turn into chilled crust:

2 eggs
¾ lb, cream cheese, softened (1 ½ packages - I use neufchatel)
½ cup sugar
½ tsp vanilla
½ tsp salt

Directions:

Mix crust ingredients and press into pan. Chill crust while mixing cake ingredients

Preheat oven to 375 degrees.


Bake 20 minutes. Remove from oven and dust with cinnamon.

Let cool to room temperature.

Heat oven to 425 degrees.

Mix well and pour over cooled cake.

1½ cups sour cream
2 Tbl sugar
1/2 tsp vanilla
1/8 tsp salt

Bake about 5 minutes to glaze cheesecake.

Let cool, then refrigerate 6 to 12 hours before serving
