Homemade Double Pie Crust
6 c. thinly sliced peeled Granny Smith apples (about 4 large)
3/4 c. sugar
1 T. cornstarch
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1 T. lemon juice

Directions:
Directions:
Toss apples with sugar, cornstarch, cinnamon, nutmeg and lemon juice. Set aside.

Roll out 1 round of pie crust and place in bottom of pie dish. Trim edges to hang just at edge of pie plate.

Fill crust with apple mixture, mounding slightly toward the center.

Roll out second pie crust and place over filling. Trim top crust about 1/2 inch beyond edge of pie plate. Fold edge of top crust under bottom crust and pinch edges to form decorate ridge.

Cut several slits near center of pie to allow steam to escape.

Bake 45-55 minutes at 400º. If the crust brown too quickly, loosely cover with foil.
