1 white onion
1 jalapeņo pepper
6 cloves of garlic
3 chipotle peppers
3 T. Adobo sauce (from can of chipotle peppers)
2 t. Oil
1 t. Cumin
1 t. Tomato paste
1/3 c. Chili powder
1 14 oz. Can tomato sauce
2 heaping tablespoons brown sugar
Salt and pepper
3 lb. Chuck roast

Directions:
Directions:
In food processor, mince onion, jalapeņo pepper, garlic, and chipotle pepper. Heat oil in skillet and saute vegetables until soft. Add chili powder, cumin, brown sugar, tomato paste, and tomato sauce and cook for a couple minutes. Refrigerate until needed.
Salt and pepper roast and place in slow cooker. Add 2 cups water. Cook on low overnight. In morning remove all but one cup of liquid. Remove roast and shred with two forks. Place meat back in slow cooker with reserved liquid. Pour chipotle sauce over top and cook on low for 8 hours.
Serve with flour or corn tortillas, rice, beans, cheese, tomatoes, lettuce, sour cream, guacamole and cilantro.
Also really good with Jalapeņo White Sauce!
