4 c. fresh or frozen green beans, cut
4 qts. tomatoes, diced
1 head of cabbage, chopped
1 lb. carrots, sliced
1 bunch celery, sliced
3 medium onions, chopped
3 bell peppers, diced
other vegetables to taste
1/4 c. mixed beans, soaked (optional)
1 bouillon cube per jar, your choice of chicken, beef, ham

In the bottom of each clean quart sized canning jars, put one bouillon cube. Add just enough hot water to each jar so that the cube starts to dissolve while you prep the vegetables.

In another pot, bring 8-12 cups of water to a boil. Add to the water one bouillon cube per 2 cups of water. Keep the water simmering until ready to fill the jars.

In a very large stock pot, mix all the vegetables together and bring to a boil. Place 1/4 cup of beans in each jar (optional). Fill each jar 3/4 full of the hot vegetables. Then top off with the hot water broth.

Wipe the rim of each jar and cover with a hot lid and ring. Process in a pressure canner for 90 minutes at the appropriate pressure for your altitude. Colorado pressure is 15 pounds.
