For the Marinade:
1 1/4 cups fresh lime juice
2 tsp olive oil
1/2 tsp chili powder
1/2 tsp ground cumin

For the Fajitas:
4 skinless, boneless chicken breast halves (about 4 oz each)
2 medium red bell peppers, cut into wide strips (about 2 cups)
1 large red onion, cut into wedges (about 1 1/2 cups)
2 medium tomatoes, chopped (about 2 cups), divided
1/2 cup chopped green onions
2 Tbsp chopped fresh cilantro or parsley, divided
8 flour tortillas, warmed

Making the Fajitas:
To prepare marinade, in a medium bowl, combine lime juice, oil, chili powder and cumin. Mix well. Reserve 2 Tbsp of the marinade. Place chicken in a shallow glass dish. Pour marinade over chicken, turning to coat. Cover with plastic wrap and refrigerate 30 minutes.

Preheat the broiler or grill. Drain chicken and place on broiler pan. Discard marinade.

Grill or broil chicken 3 inches from heat, brushing with reserved marinade and turning once, until cooked through and no longer pink, about 10 minutes. Place chicken on a plate; cover with foil to keep warm.

Place bell peppers and red onions in a broiler pan. Broil until vegetables are lightly charred, turning once, about 8 minutes.

Assembling the Fajitas:
Slice chicken into strips; place in a bowl. Add broiled vegetables, 1 cup tomatoes, green onions and 1 Tbsp cilantro. Mix gently.

Place tortillas on plates. Top with chicken mixture. Fold tortillas over filling. Serve with remaining tomatoes and cilantro.

Variations:
Mexican Medley:
For a healthy dinner in just minutes, serve the fajita fixings over a bed of lettuce to create a wonderfully delicious Mexican salad.

Hearty Fajitas:
For hearty appetites, substitute sirloin steak for the chicken and broil for 10-15 minutes. Cut steak into thin strips and serve.

Invite your friends over for a festive Mexican dinner. Serve the fajitas, hot and sizzling, for an impressive feast.

Fajita Fun:
Present guests with a fajita buffet. Line up fajita ingredients in festive bowls and let them make their own. To serve tortillas warm, wrap them in foil and heat at 350 degrees F for 10-15 minutes. Serve fajitas with an assortment of toppings, such as guacamole, sour cream, salsa and refried beans.
